Yes, believe it or not, we have a bakery on the farm. This has been our major source of income for the last few years. Joni has a real flair for baking. However, she did everything from memory. I convinced her to start writing down the recipes so we could do the baking if she wasn't there. That doesn't happen much but now we have recipes (we call them formula's) for about 25 different kinds of bread, numerous kinds of cakes, soups, cookies, etc, etc, etc.

When we make bread we measure everything by weight. Our formula's are made for the number of loaves in each batch. Our batch sizes range from 6 loaves to 50 loaves. (This is because that is the minimum and maximum size that the mixer can mix in one batch).

We have recently gotten bigger equipment which means that we should be able to make a lot more bread in a lot less time.
